Chemical properties
Colorless to white orthorhombic platy crystal or white crystalline weathered powder. Odorless or slightly odorous. It is very sweet, even if it is very sweet in 10,000 times of aqueous solution, the sweetness threshold is about 0.00049%. The sweetness in a dilute solution is about 500 times that of sucrose. It has a sweet taste when the concentration is dilute, and has a bitter taste when it is concentrated (greater than 0.026%), so the concentration when used alone should be less than 0.02%. Heating under acidic conditions, the sweetness disappears. It can form tartary sulfamic acid benzoic acid. Soluble in water (1g/1.5m1), slightly soluble in ethanol (1g/50m1).
Use
No nutritive sweeteners. Used as food sweetener and diagnostic drug
